“There’s Chicken In The Fridge.”

2020 was nuts!!! Sweet, smokey and salty candied walnuts. Inspired by recipe for Sugar and Spice Candied Nuts from Smitten Kitchen @smittenkitchen. If I was throwing a NYE party these would def be on the table but alas this year just pour moi. Prob going to be my last post of the year. May your 2021 truly be a Happy New Year! #candiednuts #candiedwalnuts. 1 cup turbinado sugar, 1/2 cup granulated sugar, 1 1/2 tsp cinnamon, 1/2 tsp smoked paprika, 1 1/2 tsp kosher salt, egg whites from two eggs, 1 1/2 tsp water, 1 1/2 lbs walnuts. Preheat oven to 300F. Mix sugars, spices and salt together; set aside. Let egg whites get to room temp, place into large bowl with the water, whisk until frothy, then add the walnuts; stir well to thoroughly cover the walnuts in the frothy egg whites. Pour the sugar and spice mixture into the bowl of walnuts; mix to thoroughly cover the walnuts in the sugar/spice mix. Pour onto parchment paper lined half sheet tray (this recipe is specifically designed for a half sheet oven tray. You may need to adjust if using a smaller oven tray). Put tray on the middle rack in the preheated oven. Bake for 35 min; carefully stir after 15 min. NOTE: If you’re not sure your oven is calibrated you may want to check on the walnuts every few (10) minutes in the beginning and every 5 near the end. The sugar coated walnuts will burn if the oven is too hot. I’m writing from experience.

This time soaking the corn husks, and making the massa, which can be made a day ahead btw. 50+ corn husks, 6 cups tamal corn flour, 1 cup pork lard, 4 cups chicken stock, 1 1/2 tsp baking soda, 1 tsp kosher salt. #tamales #massa

Tamale prep. Pork shoulder with simple rub of kosher salt, black pepper, garlic powder, dried Mexican oregano, paprika and extra virgin olive oil is out of the fridge after marinating for 24 hours and getting ready to go into the oven for a long, slow roast.
