Chamorro Finadene Sauce
This is “finadene”, the most popular (hot) sauce and condiment on Guam, where I was born.
It’s extremely easy to make, and a very versatile sauce! It’s great on pretty much everything but I have yet to try it on ice cream or pie. (I may not ever put it on ice cream or pie.)
INGREDIENTS
- 1 cup of Kikkoman soy sauce (other brands are good as well but this is what I prefer)
- Juice of 1-2 lemons, basically to taste.
- Fresh chiles, as much as you dare.
- 1-2 scallions sliced
DIRECTIONS
Preparation:- Slice scallions, add to the soy sauce.
- Add the juice of 1-2 lemons to taste.
- Add the fresh chiles.
- If you keep the chiles whole the sauce will not be very hot.
- The more chiles you crush the hotter the sauce will be.
- May be stored at room temperature (I always have a small covered bowl with this stuff on the kitchen table.)
- I did say it was easy!
