This is “finadene”, the most popular (hot) sauce and condiment on Guam, where I was born.

It’s extremely easy to make, and a very versatile sauce!  It’s great on pretty much everything but I have yet to try it on ice cream or pie.  (I may not ever put it on ice cream or pie.)


INGREDIENTS

  • 1 cup of Kikkoman soy sauce (other brands are good as well but this is what I prefer)
  • Juice of 1-2 lemons, basically to taste.
  • Fresh chiles, as much as you dare.
  • 1-2 scallions sliced

DIRECTIONS

Preparation:

  • Slice scallions, add to the soy sauce.
  • Add the juice of 1-2 lemons to taste.
  • Add the fresh chiles.
    • If you keep the chiles whole the sauce will not be very hot.
    • The more chiles you crush the hotter the sauce will be.
  • May be stored at room temperature (I always have a small covered bowl with this stuff on the kitchen table.)
  • I did say it was easy!
