Sweet and Smoky Candied Nuts
These are so addictive that I was told to stop bringing them into the office at a previous job. My co-workers were gaining weight! (It’s not my fault they couldn’t stop eating them.)
Many years ago I decided, for health reasons, to stop eating, or making, anything with processed white sugar or high-fructose corn sugar/syrup. Once I made that decision I would often look at the ingredient list on products and was surprised at how much of the processed foods contain both; my favorite snacks included.
I began trying to find recipes for candied nuts that didn’t use either but couldn’t find any so I decided to make my own using organic raw cane sugar and organic brown sugar.
INGREDIENTS
- 1/3 lb each of raw pecans, walnuts, and cashews
- 1/2 cup organic raw cane sugar
- 1/4 cup organic brown sugar
- 2 tbsp cinnamon
- 1 tsp smoked paprika
- Sometimes I add a pinch of cayenne, chipotle or ancho chili powder to really spice things up.
- 1 tsp kosher salt
- 1 egg white
- 1 tsp water
DIRECTIONS
Preparation:
- Preheat oven to 200° F; place one rack on the middle level.
- Place the egg whites from one egg into a medium to large stainless steel mixing bowl, add 1 tsp of water, whisk until frothy (see photo below).
- In a separate bowl place the sugars, cinnamon, smoked paprika, and salt; mix well; set aside.
Cooking:
- Place all the nuts into the bowl with the frothy egg whites, mix to get all the nuts coated with the egg whites.
- Pour the sugar and spice mixture into the bowl of egg white coated nuts; mix well to get all the nuts covered evenly with the sugar/spice mix.
- Pour onto a baking tray and place on the middle rack in the preheated oven.
- Bake for 1 hour.
- Remove from the oven and allow to cool.
- Your sweet and smoky candied nuts are ready! You better hide them!
- Consume immediately. If you have any left, store them at room temperature in an airtight container, preferably well hidden.
